I'm responsible for the Moin wikis at Ubuntu, TheOpenCD and SoftwareFreedomDay. I'm co-author of the 'balanced' theme.
Ways in which I use Moin
At TheOpenCD project
We are not only using Moin as our project wiki, but we are also using it like this:
The CD Orchard CD building system
The MoinMoin Desktop Edition is included as an application on TheOpenCD as of v3.1
- We will be migrating our main website to Moin using a new 3-column theme (balanced2)
We plan to use the Moin Desktop Edition to power our next CD browser. See: spec
At Ubuntu
The Ubuntu wiki has about 5000 pages and often gets several hundred page updates a day. see: https://wiki.ubuntu.com/
It has a custom skin developed with Heather Stern. The same wiki can be accessed with different default skins at different URLs for our related projects: http://wiki.kubuntu.org/ and http://wiki.edubuntu.org/ (these are all variants of the 'balanced' skin made available on this site)
In a few weeks, we will be moving our front-end website to Moin, using it as a CMS. A test version of it can be seen here: http://69.60.114.106/ (someone whose python is better than mine is currently cleaning up the code, and then we will launch the site and publish the code -- the code on the current site is the same as in the balanced theme)

- I'm currently working on a new theme, called balanced2, which will use a 3-column layout.
Set up a moin instance for my father to publish his ecology website at http://wiki.ommaterra.de which will replace http://www.ommaterra.de This site has a secondary theme ('terra2') which has a flexible 3-column layout. It will be published as 'balanced2'.
