Observation
Set up a little moinmoin to be a 'checklist' for when I do virus scans, mouse cleaning, etc, on some computers in a lab. Buddy tried to help but found the wiki to be 'grandiose', aka overcomplicated for what it was doing.
My buddy was trying to help so he opened up the wiki link I had on the computer. Then he tried to click in the cells of the table on the wiki to update some information on the checklist. Nothing happened. I had to tell him to click 'edit' and then he had to scroll thru a bunch of junk finding the right place to fill in the information.
Click on a cell in a table and you can edit it.

Discussion
Because wysiwyg roxors and markup sux0rs. The good thing about wiki is its free and simplistic. Wysiwyg would make it even more simplistic.
Section editing, like in DokuWiki and MediaWiki, would help solve the issue. You see "edit" button everywhere, and you intuitively know what to do. I have demo'd the Section editing plugin, and it works ok. I primarily use DokuWiki, and I ALWAYS use edit sections even though most sections are only a single paragraph. It's just so much easier than scrolling through a page again to find what you want to edit. It's almost feels like a compromise to AJAX, because you can almost click right where you want to edit, and that is what is displayed for you for editing.
Implement wysiwyg table editing. Probably using Javascript would be easier than doing it in a gigantic ass html form.
Try using WikiCalc.
